Ari’s Natural Wine Co. haven’t just jumped on the natural wine bandwagon. It’s the way they’ve been doing it for generations. Tony’s father, Ari, carried the humble methods of winemaking from the Mediterranean climes of Greece to Australia when he migrated in 1962 – hand-pressed, wild fermented, unfiltered, unrefined and no sulphur added at any part of the process. Two generations later Ari’s have set up in the Southern Highlands of NSW, sourcing grapes from like-minded growers. Ari’s Natural Wine Co. is a true family venture and a cultural legacy of making wine in harmony with a region.
At Paperbark we adore Ari’s philosophy of winemaking – nothing added, nothing taken away. Each vintage is a diary of the seasons. Ari’s and Paperbark share a natural affinity of approach to food and wine, and we can’t wait to showcase the four wines of Ari’s 2019 vintage – Orange, Restini, Lucky No. 5 and Big Red.
In celebration of Ari’s Greek heritage and its untold influence on Australian life, the Paperbark kitchen will pay homage to this ancient culture. We are pairing Ari’s wines with an eight-course shared degustation. Paperbark will give its in-house native flair to traditional Greek kouzina, complimenting the stunning natural qualities of Ari’s wines and the landscape in which they were created.
